Triangle corn chips drowned in orange mystery-cheese sauce does not a proper plate of nachos make. Luckily, several local restaurants take the humble dish to an art form. A twist on the hummus nachos, Salut’s new srir-achos ($10.50) tops crispy pita chips with scoops of homemade Sriracha hummus, red onion, feta, mint and a tzatziki drizzle.

Four Peaks Brewing Company

Every brewpub requires stick-to-your-ribs bar food that stands up to pint after pint. The intimidating five-layer nacho dip ($9.50) does that with ease. A gigantic platter bears a mound of colorful chips dripping with gooey cheese, and you can customize each bite with a combo of jalapeño, tomatoes, black beans, sour cream and salsa. In the brewhouse nachos ($9.50), beer cheese smothers chips, garnished with black beans, mixed cheese, jalapeños, pico de gallo, green onions and sour cream. Add shredded chicken or pork pibil ($3).

Barrio Queen

Pork green chile steps in for the traditional crispy pig ear in this version of nachos chingones ($11). The chile is layered with fresh-made chips, Oaxaca cheese, roasted onions and pico de gallo.

Tilted Kilt Pub and Eatery

Ireland isn’t famous for its chips and cheese duo, but the TK Irish Nachos ($8.50) is a compelling effort. Fresh-cooked crispy potato chips are smothered with signature Guinness Beer Cheese sauce and garnished with seasoned ground beef and tomatoes.

Joe’s Crab Shack 

Order the crab nachos ($10.59) for crab-covered chips topped with Monterrey Jack cheese, pico de gallo and black bean and corn relish, with avocado lime dressing.

Fuel up at this golf and entertainment venue with the signature nachos ($8). Eight individual, oversized chips are topped with a drunken bean puree, three-cheese blend and chimichurri drizzle. Add smoked chicken ($2), steak ($3) or smoked brisket ($3).

For dessert, save room for the chocolate nachos ($6.50). Chocolate tortilla chips are covered with vanilla ice cream, real cream topping and chocolate syrup with a cherry on top, of course.

Thirsty Lion Gastropub & Grill

Rather that what’s on it, the question should be: What is not on the ultimate nachos ($10.95)? Tri-color chips and Cheddar and Jack cheeses are topped with tomatoes, olives, jalapeño, green onions, Santa Fe bacon black beans, herbed sour cream, chipotle aioli, guacamole and fresh salsa. Boulders on Broadway 

The big freaking nacho ($9.75) takes on a pizza persona with a blanket of mozzarella, Italian sausage, black olives and pepperoncini over a pile of light and airy chips — the twist that gives this dish a distinct crunch. Marinara is on the side for dipping. The not-so-big freaking nacho ($7.49) suits smaller appetites.
